Orange sponge cake

Ingredients

  • 100 g of oil

  • 250 g of flour

  • 250 g of sugar

  • An orange (cut in four quarters)

  • Three eggs

  • A natural yoghurt

  • A small packet of baking powder (15 grammes)

Other useful accessories:

  • A spoon

  • A cooking brush

  • A mould

Preparation

  1. Preheat the oven to 180 degrees.

  2. Baste a little bit the mould and sprinkle slightly some flour over.

  3. Pour the sugar, the orange and the eggs into the thermomix and wait for 3 minutes until it grinds the ingredients.

  4. Add the oil and the yoghurt and wait for 5 seconds until they all get mixed.

  5. Do the same with the flour and the baking powder, and wait just for 15 sec.

  6. Once we have the mixture, pour it into the mould.

  7. Put the mould into the oven for about 35-45 minutes approximately to 180 degrees.

  8. Take the sponge out of the oven in order to chill it, for around 10 minutes.

  9. Wait until the sponge gets cold inside the fridge.

  10. Serve once it is totally cold.

Buddha bowl

You might assume by the name of this recipe that I am making some kind of religious statement, but in reality, I am not. I just love wholesome and delicious recipes.

Buddha bowls are simply made of raw or cooked veggies (the more nutritional the better) and also some cereals (for extra protein).

What will I need?

Get a bowl and then feel free to experiment with all your plant-based goodness.

All the ingredients that you will need to make this recipe are all vegan and plant-based ingredients.

Ingredients

  • 2 hf of brown rice

  • 2 hf of lentils

  • 1/4 of a ripe avocado

  • 1 tomato

  • ½ a lemon (lemon juice)

  • Some leaves of rocket

  • 2 tps of chia seeds

Preparation

First, get a saucepan, put the rice in it and pour some water. Then we will be having our brown rice cooking for around 20 minutes (in case you are using white rice just leave it for 12 minutes). Get another saucepan to cook our lentils, which they will only need 15 minutes of cooking.

Once our rice and lentils are all boiled, we will mix them both in a bowl. After this, it is time for the avocado. I like to use ripe avocados, so that it is much easier to smash them with a fork and then add some lemon juice and pepper. Avocados are pretty beneficial for our health. They contain potassium, fibre and they are loaded with healthy fatty acids. . Moreover, they can also lower our cholesterol levels.

Buddha bowl

Next, we will dice our tomato in big chunks and mix everything up using a big spoon.

To spice it up I like to squeeze half a lemon to make it a little bit bitter, but you can always use your ultimate favourite spices.  I advise you to roll your lemon before squeezing it, because in this way, the juice will come out more easily.

Mix everything up again and to give it a little bit of texture, I like adding some leaves of rocket, but you can always use lettuce, spinach or even kale.

And finally, we will be adding two tablespoons of chia seeds, which are loaded with fibre, protein, Omega-3 fatty acids and various micronutrients.

Those are all the steps that you need to take to make this incredible Buddha Bowl.

However, you have always to keep in mind that, feeling happy with what we eat, it is the most important step of all.

Buddha bowl

Ingredients

  • 3 eggs

  • One yogurt of lemon

  • 150g of sugar

  • One glass of oil

  • 250g of flour

  • One packet of yeast

  • One spoonful of butter

  • One bowl to mix all the ingredients

  • One mould for the cake

Preparation

  1. First, we take the bowl and pour the eggs, the sugar and the yogurt on it. We mix until the mixture is foamy.

  2. Then, we add one glass of oil to the mixture, and we mix all very well. When the mixture is ready, we pour the flour and the yeast on the bowl with the previous mixture. We mix everything until getting an homogeneous dough.

  3. Finally, we spread the butter in the mould and we pour on it the prepared dough. We heat up the oven 160 degrees and we put the mould in the oven. We wait 30-35 minutes.

  4. Then, we take the mould out of the oven, we put it on a plate and we let it cool before eating.

Crepes

Ingredients

  • 100g of plain flour

  • 2 eggs

  • 300ml of milk

  • 1tbsp sunflower or vegetable oil, plus a little extra for frying

  • Straberry jam  or nutella, (To serve, it’ss optional)

Preparation

  1. Put the flour, milk, eggs, sugar, salt and oil into a bowl, then whisk to a smooth batter. Set aside for 30 min to resto or start cooking.

  2. Set a medium frying pan or crepe pan over a medium heat and carefully wipe it with some oiled kitchen paper. When hot, cook your crepes por 1 min on each side until Golden, keeping then warm in a low oven as you go.

  3. Serve with straberry jam, or your favoutite filling. Also adding more salt, and other ingredients as tumeric or parset, will give you tastier crepes.

Cannelloni

Ingredients

Filling the pasta

  • Minced meat

  • Garlic

  • Black pepper

  • Paprika

  • Salt

  • Sunflower oil

  • Fried tomato

Pasta​

  • Pasta

  • Water

  • Olive oil

Bechamel

  • Olive oil

  • Wheat flour

  • Milk

  • Nutmeg

  • Salt

Preparation​

  1. we put a frying pan on fire with sunflower oil, we throw minced meat, and we add: salt, garlic, paprika, black pepper and we let it fry. Later, when the meat is fried, we add fried tomato and we let it slow cooked.

 2. We boil water in a saucepan with a few drops of olive oil, later, when it’s boiling we add pasta about 2-3 minutes and finally we let drain the              pasta.

 3. First we take the pasta and put some meat and roll it. We do this step with all pasta.

 4. We put a frying pan on fire with olive oil, wheat flour and we let it fry in continuous movement. Later, we add milk, salt and nutmeg and we stir it,          but I give you an advice: you can take a whisk to remove lumps. We must remove until the bechamel will be a bit thicken.

 5. when the bechamel is thicken we put the bechamel on the cannelloni.

 6. Finally we put the cannelloni into the oven about 180 degrees and more or less 10 minutes until the bechamel was gold-coloured.

Macaroni bolognese

Ingredients

  • 100 grams of macaroni

  • 200 grams of minced beef

  • 100 grams of crushed tomato

  • An onion

  • Two carrots

  • 50 ml of white wine

  • Ground pepper

  • Olive oil

  • Salt

Preparation​

  1. To make this recipe first peel and cut in small pieces the onion and the carrots

  2. Once is done, we will have to add a little oil in a frying pan and when it warms, we fry the onions and carrots in a low-heat for a few minutes. While we put to boil the macaroni

  3. When we see that the onion changes color, it is the time to add the mat to the pan and to give a pinch of salt, so that it cooks well. Don’t leave the fire because you will have to go stirring the meat to integrate perfectly with the onion and carrots and not burn

  4. When the meat begins to do is when we have to throw the tomato and a little of the white wine to the pan. You shouldn’t wait until the meat is completely cooked or almost done, only when is not completely raw you must add the tomato and the wine to the pan and mix everything. For the result to be tasty and delicious, the ideal is to fry the meat and tomato almost simultaneously

  5. Then you just have to put the fire on a medium level and let the meat and the tomatoes are cold. Try the flavor of the Bolognese and when you think it is ready, turn of the fire.

  6. To finish the recipe, we drain the macaroni and serve in a plate. After we have to mix the sauce of Bolognese with the macaroni. The recipe is finished.

Spanish omelette

  • Potatoes

Preparation​

​You must to take one egg every 100 grammes of potatoes. First thing that you have to do is to peel potatoes and to cut it into sheels. Now, you have to fry potatoes, while potatoes are frying, you have to beat eggs. Once you have beaten eggs and fried potatoes, you mix everything in a bowl and threw salt. Finally, we threw everything in a pan and wait until the Spanish Omelette is cooked.

Homemade pizza

Ingredients

  • 1 pizza dough

  • 2 ham slices

  • 4 or 5 tomato sauce tablespoons

  • Mozzarella

  • ½ of a bacon packet

  • Some oregano pinches

  • 1 egg

Preparation​

First of all, we preheat the oven 10 minutes at 150º. We take the pizza dough and we add the tomato sauce tablespoons and spread the sauce with a spoon. When have done it, we chop the ham slices in many small chunks, open the bacon packet and we add half of the packet and the ham. Later, we spread the oregano and, after this, we put the mozzarella on the pizza and later the pizza into the oven. It must stay there for 15 minutes at 150º. Passed this time, we take the pizza out and crack an egg over it. We put it into the oven again and gratin it for 2 minutes more. After this, we get the pizza out again and enjoy it!

Spanish omelette

Ingredients

  • 1 kg potatoes

  • 8-9 eggs

  • 200 ml olive oil

  • Salt to taste

  • Frying pan

  • Knife

  • Boll

  • Woos ladle

  • Greater

Preparation​

First of all we peel the potatoes using the knife and clean them with kitchen towels. To cut the potatoes we use the greater. It cut them in thin layers, but be carefully with your fingers. Later we must turn on the electric hobs and put the frying pan on it. And later we spread a small amount of oil on it. After that we pour the potatoes into the frying pan, stir a little and reduce the de speed of the electric hobs. Now is the moment of Beat the eggs separately, while the potatoes are cooking in the electric hobs. We can put a little salt to taste. Later we have to prepare a mixture of potatoes and eggs using the plastic boll. If you want, you can put more salt to taste now. After that we stir that mixture to mix all the ingredients well using the wood ladle. Now we have to pour the mixture from the boll to the frying pan carefully and stir it a little. That is one of the most important steps. We must wait about 20 minutes while the omelet is frying.

 Finally we turn the omelette over three times before serve it.

Plum-cake of nuts and spices & Strawberries’s smoothy

Ingredients

  • 30g of hazelnut.

  • 30g of Corinto’s raisin.

  • 30g of almond hangover and peeled.

  • 30g of nuts.

  • 30g of fruit crystaññized in pieces.

  • 30g os drys fig in pieces.

  • 3 eggs.

  • 150g of sugar.

  • 125g of butter.

  • 100g of black beer.

  • 100g pf sweet wine.

  • 50g of anisete.

  • 1 ½ spoonful of cinamon.

  • Pinch of grated nutmeg.

  • 330g of flour.

  • 3 spoonful of Royal’s leavening.

  • 1 ½ pinch of bicarbonate of soda.

  • Pinch of salt.

  • 4 or 5 cherries.

Preparation​

  1. First, putt he nut, fruit crystalliza and the dry fig into the glass and cut into pieces for 5 to 8 second, speed 5. Pour into the glass the eggs and the sugar and programme, 2 minutes, 37º, speed 3. When this process finally, putt he butter, the beer, the wine, the cinamon and the rest of nutmeg, and mix, 7 second, speed 3.

  2. Now, put in the flour, the leavening, the bocarbonate of soda and the salt and programme 10 second, speed 3 ½. Add the reserved nets and mix delicately with the spatula.

  3. Next, put in a big mould the plum-cake; previously baste with butter and coat with flour. Making sure don’t fill up more tan a half. Divede up the cherries and skin a Little in the mass. Introduce into the furnace at 180º during 40 minutes aproximately. Check it, if it is do, pokking in the center, the mass must be dry. Sprinkle the glass sugar.

Ingredients

  • 60g of strawberries.

  • 50g of liquid cream.

  • 50g of sugar.

  • Mint’s loaf in pieces.

Preparation​

  1. Cut in pieces the strawberries with the milk, the cream and the sugar. When this is finishing, let cool inth fridge and strain.

  2. Put into a glass and decórate with chooped mint.

Macaroni and cheese carbonara

Ingredients

  • Macaroni

  • Bacon

  • Mushrooms

  • Grated cheese

  • 2 eggs

  • Minced onion

  • Oil

  • Salt

  • Ground black pepper

  • Oregano

Preparation​

  1. First, we add some olive oil on a frying pan and when the oil gets hot; we add the minced onion and stir it. Then we add the mushrooms and the bacon.

  2. We put on another stove burner a pan with water, oregano, ground black pepper and salt. When the water boils, pour the macaroni and let it cooks during 10 minutes. Then we strain it and put again on the pan.

  3. Next, we break the eggs on a bowl, add some salt and mix, and then we add the grated cheese.

  4. Finally, we blend the macaroni with the rest of the ingredients. First, with the onion, the mushrooms and the bacon, and then with the egg and the cheese.

Chicken and rice

Ingredients

  • Pieces of Chicken

  • 1 Chicken stoke cube

  • 1 Green pepper

  • 1 Red pepper

  • 1 white onion

  • 1 Can of peas                                          

  • 3-4 Carrots

  • 1kg of Rice

  • Sunflowers oil

  • Salt

  • Food colour

Preparation​

  1. Add water, where place the chicken and add salt, after put one chicken stoke cube for the stock in a medium pot. Bring to a boil, cover and reduce the heat to medium low. Cook for 20 to 25 minutes.

  2. In the other container let cook three or four carrots.

  3. Clean, wash and cut a green pepper, a red pepper, a white onion and four boiled carrots. And take it peas in other bowl.

  4. when the chicken is tender, take it out in other container. And in the broth, add the rice and food color. Next when the chicken is cools slightly shred it with your hands into medium pieces.

 5. Let cook over medium low heat until the rice is dry, add oil and salt.

 6. In a large skillet brown the white anion, a pieces of green and red pepper, and then add pieces of carrots too. Cook about 4 to 5 minutes.

 7. Add the rice with the remaining ingredients and mix well, and then add the peas and mix too.

 8. Finally add the shredded chicken, mix well and cook for 5 minutes more.

 9. ¡Serve and enjoy!

Spanish Omelette

Ingredients

  • Potatoes

  • Eggs

  • Salt

  • Olive oil.

Preparation​

Peel the potatoes and cut into medium sized squares. Sprinkle with salt and fry in

hot olive oil until they begin to go golden. It’s better if they are not well cooked and

are almost boiled in the oil, so that the omelette is moister. Drain and set aside.

Lightly beat the eggs with a little salt. Mix with the potatoes. Place a small amount

of oil in the frying pan and heat. Pour the mixture into the pan and cook on a low

heat for 15  minutes or until you see it going golden. Do not overcook as it will dry

up.

When it is ready on one side, with the help of a plate of the top of a saucepan, turn

it around and cook the other side. When cooked place on a serving dish

Ingredients (5/9 crepes depending on their size)

For the crepes:

  • 200ml of milk

  • 1 egg

  • 125g of flour

  • A pinch of salt

For the pizza part:

  • Mozzarella

  • Tomato sauce

  • Cooked ham

  • Oregano

Preparation

For the crepes:

  1. Put the flour, a pinch of salt, the egg and the milk in a bowl.

  2. Mix all the ingredients and pour the mixture into a jug.

  3. Heat a slice of butter in a pan and put any excess butter in the mixture (mix again).

  4. Cook a big crepe that fills all the pan (as soon as you put the mixture into the pan don’t let it cook and spread the mixture all over the surface)

For the pizza part:

  1. When one side is cooked turn it over and add the ingredients as follows:

    • Tomato sauce

    • Cooked ham

    • Oregano

    • Mozzarella

  2. Close the crepe to keep all the ingredients in and make sure the side you are cooking is done.

  3. Serve and enjoy.

Pizza Crepes

Ingredients

  • 100 g of Butter

  • 3 Oil spoons

  • 5 Wheat flour spoons

  • Milk

  • Salt

  • Ham pieces

  • Black Pepper

  • Nutmeg

  • Bread crumbs

  • Egg

Preparation

  1. In first place we have to melt the butter, when it is melted we have to add the oil, later the wheat flour and then the milk. When this mixture has got thicker, we had to add the spices, the salt and the ham and move it. Once it is thick, we have to let it rest in a plate and wait until it is completely solid.

  2. Once the mixture is cold we shape them and cover with beated egg and bread crumbs.

  3. Finally we only have to fry them.
